For more than 25 years, Ile de Ré Chocolats has been an institution which, from father to son, has been making chocolate, caramel and regional specialties for the pleasure of gourmets, young and old!Artisan Pâtissier Chocolatier, a generation story
Artisan Pastry Chef Chocolatier anchored in the territory since 1973, in Ste Marie de Ré, it was in 1995 that the history of Ile de Ré Chocolats began in Saint Martin de Ré.
Daniel Vallégeas and his son Eric create their first manufacturing workshop, a shop and a visit open to the public. A few years later, activity progresses (with the development of a service for professionals) and the premises become too small.

In 2013,
A second manufacturing site opened in La Rochelle to continue growing the business and to open up to export. Finally in 2018, a second shop opens its doors on Boulevard Joffre, in La Rochelle.
Today, the Ile de Ré Chocolats team has 25 people (including 10 chocolate makers) spread over the 3 sites: the workshop / boutique of St Martin de Ré, the workshop Rue Elie Barreau in La Rochelle and the boutique of La Rochelle

La Chocolaterie uses local raw materials to make and imagine regional specialties and fine, quality chocolates. It is therefore committed to making local producers work like salt and fleur de sel from Ile de Ré and AOP Charente-Poitou butter.
In addition to using local ingredients, Ile de Ré Chocolats is committed to offering products that reflect its territory: Pilots de Sel, Fort Boyard, Caramels with fleur de sel, Oysters, Potatoes from Ile de Ré, Sardines, Chocolate molds…

Ile de Ré Chocolats selects varieties of cocoa beans from plantations around Ecuador: Africa, Asia, Central and South America. Eric Vallégeas works with planters or cooperatives engaged in good agricultural practices, certified Fair Trade: Max Havelaar, Cacao Trace, Cocoa Horizons, Committed Chocolatiers….
Concerned about the quality of his cocoa, he is also careful to work with healthy ingredients to offer a healthier and shorter list of ingredients.
To reinforce its commitment, Île de Ré Chocolats now offers its customers a range of certified organic farming: tablets, spread, caramel cream, candied orangettes ...
CERTIPAQ BIO is the organic certification body for Ile de Ré Chocolats; this certification requires compliance with the strict specifications and its renewal each year.
